Baby Cos & Surimi Salad with Lemon & Caper Mayo

Ingredients

• 2 baby cos lettuce
• 400g (2 cups) Shore Mariner Surimi Salad Mix
• 1 cup croutons
• ¼ cup finely chopped shallots
• juice and zest of ½ lemon
• ¼ cup finely chopped capers
• ¼ cup finely chopped gherkin
• 1 hardboiled egg, finely chopped
• 3 Tbsp mayonnaise
• 1 Tbsp chopped fresh dill (or parsley)
• Salt and pepper to taste
• 1 cup croutons

Method

  1. Break up the baby gem lettuce into leaves, rinse well in cold water and dry in a salad spinner.
  2. Place the shallots in a sieve and rinse well under cold running water for 2-3 minutes to remove some of their raw pungency.
  3. Combine with all the remaining ingredients except the croutons and season to taste.
  4. Stir the Shore Mariner Surimi Salad Mix and dressing mix through the gem leaves just before serving and top with the croutons.
