Seafood Hot Pot

Serves: 4 - 6

Ingredients

• 1 Tbsp olive oil
• 1 large onion sliced
• 1 tsp crushed garlic
• ½ tsp dried thyme
• ½ tsp dried rosemary
• 1 x 400g tomatoes chopped in juice
• 1 x 400g can tomatoes chopped in puree
• 2 tsp sugar
• ½ cup med white wine
• 3 small zucchini sliced
• 200g Shore Mariner Marinara Mix, defrosted & drained
• 200g Shore Mariner Squid Rings, defrosted & drained (optional)
• 12 Shore Mariner Raw Prawn Meat, defrosted & drained (optional)
• 12 Shore Mariner Scallops, defrosted & drained (optional)
• ¼ cup chopped parsley
• 2 Tbsp sweet chilli sauce
• ¼ cup chopped fresh basil
• 2 Tbsp lemon juice
• Salt & pepper, to taste

Method

  1. In a large pan heat the oil, and gently sauté the onion on a low heat for 5 minutes until soft and without colouring.
  2. Add the garlic, thyme, rosemary, tomato, wine & sugar. Bring to the boil and simmer uncovered for 5 minutes.
  3. Add the zucchini, Shore Mariner Marinara Mix, Shore Mariner Squid Rings, Shore Mariner Raw Prawn Meat & Shore Mariner Scallops, cover and bring to a simmer. Cook for 3 minutes until the prawns are pink.
  4. Stir in the parsley, sweet chilli sauce, basil and lemon juice. Season with salt and pepper.
  5. Serve immediately with crusty bread.
